Working at the winery is the final touch of all the detailed tasks performed all year long in the vineyard. As we are getting closer to the harvest date, looking carefully at the grapes, tasting them regularly allows us to harvest at the optimal maturity of the fruit. The hand harvested grapes are carried to the cellar in 30 pounds baskets. After a last selecting, the grapes are put into small temperature-controlled stainless steel tanks. Handling small parcels of land improves the quality and maintains the terroir’s identity during the entire winemaking process.
From Autumn 2012, the estate will produce a range of 5 standard commercial wines for release in 2013:
  • A rosé from Grenache Gris and Grenache Noir grapes
  • A white Côtes du Roussillon blended from Grenache Gris and Macabeu
  • A red Côtes du Roussillon Villages blended from Grenache Noir, Carignan, Syrah and Mourvèdre
  • A dry red Maury blended from Grenache Noir, Carignan, Syrah and Mourvèdre
  • A Natural sweet Maury wine from Grenache Noir
